Cajun Blackberry Dumplings

Delicious Summer Treat Can Also Be Made With Blueberries

It’s the season for berry picking, and with this delicious recipe, you will have somewhere to put all those delicious berries!

This recipe is great for breakfast, snack or dessert, and you can easily substitute a mixture of blueberries for the blackberries if you wish.

Ingredients:

  • 4 tablespoons melted butter
  • 1 cup whole milk
  • 2 large eggs, well beaten
  • 3 ½ cups sugar
  • 2 teaspoons pure vanilla
  • 3 ½ cups all-purpose flour
  • 3 teaspoons baking powder
  • 4 cups water
  • 1 ½ cups blackberries
  • whipped cream or vanilla ice cream for topping

Directions:

In a medium bowl, whisk together melted butter, milk, eggs, 1 cup sugar and vanilla.

In a separate bowl, combine flour and baking powder.  Add the dry ingredients to the liquid ingredients and stir, but do not over-mix.  This will be thick.

When dumpling batter is ready, combine water, 2 ½ cups sugar and blackberries in a large skillet.  Cook the fruit over medium heat until the mixture thickens.

Drop dumpling batter by tablespoonfuls into blackberry sauce mixture in the skillet.  Cover and cook until dumplings rise.

Test them by inserting a fork into the dumplings.  When it comes out clean, remove the dumplings from the skillet and continue with the remaining batter.

Serve warm with the blackberry sauce mixture ladled over the dumplings.  Top each dish with rich dollops of whipped cream or ice cream (I prefer the ice cream).
